The Italian style involves roasting coffee to a higher temperature and longer than a traditional lighter roast. Italian roast coffee is a very dark roast that's common in southern Italy.
Coffee beans, in this style, are roasted until they turn black and the natural coffee oils are produced. This giving this coffee a lovely bitter edge and reminds a lot of people of dark chocolate.
